Sweet Potato Burgers

Ingredients

Burger Patty

  • 1 can Farmer's Market Organic Sweet Potato Puree
  • 1 cup Black Beans Drained and Rinsed
  • 1 tsp Salt
  • 2 tsp Paprika
  • 1/4 Green Bell Pepper Chopped
  • 1 cup Panko Bread Crumbs
  • 1 tsp Onion Powder
  • 1 tsp Black Pepper
  • 2 tbsp All-Purpose Flour

Jalapeno Slaw

  • 2 cups Purple Cabbage Shredded
  • 2 tbsp Mayo
  • 1 tbsp Sugar
  • 1 tbsp Rice Vinegar
  • 1 tbsp Jalapeno Chopped
  • 1 tsp Salt

Tzatziki

  • 1 cup Greek Yogurt
  • 1/2 cup Cucumber Chopped
  • 3 tbsp Fresh Dill Chopped
  • 2 tsp Garlic Powder
  • 2 tbsp Lemon Juice About 1 1/2 - 2 Lemons

Instructions

  1. In a medium sized bowl whisk together mayo, sugar, rice vinegar and salt until combined. Add jalapeno and shredded cabbage, mix until combined and set aside.

  2. In a small bowl whisk together tzatziki ingredients and set aside.

  3. In a large bowl combine Farmer's Market Organic Sweet Potato Puree, black beans, salt, paprika, bell pepper, onion powder, and black pepper until well mixed. Add flour and panko breadcrumbs until mixture is able to be formed into balls.

  4. Use ½ cup measure to form the burger patties, slightly flattening.

  5. Heat a frying pan to medium with 1 tablespoon of olive oil and cook each patty 3-4 minutes on each side or until golden brown.

  6. Serve on a brioche bun with tzatziki and jalapeno slaw.
