Pumpkin Raisin Muffins
Ingredients
- 1 can Farmer's Market Foods Organic Pumpkin
- 3 1/2 cup flour
- 1 cup sugar
- 2 eggs
- 1 1/4 cup milk
- 1/4 cup softened butter
- 1 cup raisins
- 4 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1/4 cup oats
Instructions

Preheat oven to 400 F. Put muffin cups into muffin tins.

Cream butter and sugar together until fluffy. Beat in the pumpkin and eggs.

Sift remaining dry ingredients (except for oats) into the bowl, and slowly add milk; stirring with your hands until just incorporated.

Dredge raisins in 1/2 cup of flour, and stir in raisins.

Spoon mixture into paper cups in muffin tin, and sprinkle oats over top each muffin. Bake for 20-25 minutes, let cool, and serve.
