Pumpkin Oat Balls

These yummy Pumpkin Oat Balls take less than 1 hour to make, and they are delicious! These make a perfect quick and easy snack to grab when you are in a hurry.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup vanilla protein powder this step is optional
  • 2 teaspoons pumpkin pie spice
  • 1/2 cup Farmers Market Pumkin Puree
  • 1/3 cup maple syrup
  • 1/3 cup chocolate chips

Instructions

  1. In a large mixing bowl, combine the oats, protein powder, and pumpkin pie spice until evenly combined.

  2. Add Farmers Market Pumpkin Puree and maple syrup to the bowl. Stir thoroughly until well combined. You want the mixture to be thick and sticky.

  3. Add the chocolate chips to the bowl and mix together.

  4. Using a small cookie scoop gather one ball and roll it between your hand for the best shape possible.

  5. Place the ball on the tray lined in parchment paper, make sure the balls aren't touching. Refrigerate for about 25 minutes so that the balls can firm.

  6. Remove the pumpkin balls from the fridge and enjoy!
