Pumpkin Chocolate Chunk Cookies
These little cookies are so moist and a delicious treat or snack. Recipe courtesy of Farmer’s Market employee, Paige Gill.
- 1 15 oz. can Farmer's Market Pumpkin
- 1 cup shortening
- 3/4 cup sugar
- 3/4 cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- 2 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 teaspoon nutmeg
- 1 1/4 teaspoon cinnamon
- 1 cup chocolate chips
- Cream shortening and sugars. Add egg, pumpkin, and vanilla. Sift and add dry ingredients. Fold in chocolate chips.
- Bake in 350º oven for 14 to 15 minutes
Chef's tip: For a crunchier cookie, use 1 cup of pumpkin instead of the whole can.
