These muffins are sweet, spicy, and will keep the spirit of fall alive all year long! Packed with pumpkin, spices, and chocolate chips, this recipe is sure to become a favorite!
Pumpkin Oatmeal Muffins
- 1 cup Farmer's Market Foods Pumpkin Puree
- 1 cup brown sugar
- 1 egg
- 2 tsp vanilla extract
- 1 cup flour
- 2 cups oats
- 1 tsp ground nutmeg
- 1 tsp cinnamon
- 1 pinch salt
- 2 tsp baking powder
- 3/4 cup semi-sweet chocolate chips
Preheat oven to 350 F, and prepare the muffin tin with liners or a non-stick cooking spray.
In a large bowl, mix together the pumpkin puree, brown sugar, egg, and vanilla extract.
In a separate bowl, mix together the flour, oats, spices, salt, and baking powder.
Combine the two mixtures in one bowl, and fold in the chocolate chips.
Fill 3/4 of each muffin tin with mixture, and bake for 20-23 minutes until cooked through.
Let cool for 20 minutes before removing to serve.
