Pumpkin Oatmeal Muffins

  • 1 cup Farmer's Market Foods Pumpkin Puree
  • 1 cup brown sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1 cup flour
  • 2 cups oats
  • 1 tsp ground nutmeg
  • 1 tsp cinnamon
  • 1 pinch salt
  • 2 tsp baking powder
  • 3/4 cup semi-sweet chocolate chips


  1. Preheat oven to 350 F, and prepare the muffin tin with liners or a non-stick cooking spray. 

  2. In a large bowl, mix together the pumpkin puree, brown sugar, egg, and vanilla extract. 

  3. In a separate bowl, mix together the flour, oats, spices, salt, and baking powder. 

  4. Combine the two mixtures in one bowl, and fold in the chocolate chips. 

  5. Fill 3/4 of each muffin tin with mixture, and bake for 20-23 minutes until cooked through. 

  6. Let cool for 20 minutes before removing to serve.
