Pumpkin Chocolate Chip Pancakes

- 1 cup Farmer's Market Foods Organic Pumpkin
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 3 tbsp brown sugar
- 2 tsp baking powder
- 2 tsp baking soda
- 1/2 tsp salt
- 2 cups coconut milk or fat free milk
- 1 egg
- 1 tbsp vinegar
- 1/2 cup semi-sweet chocolate chips
- 1/4 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1 pinch nutmeg
- 1 pinch ground cloves
In a large bowl, mix together the dry ingredients.
In another bowl, mix together the wet ingredients. Slowly add the wet ingredients to the dry.
Pour the pancake batter into a heated pan coated with non-stick spray or oil. Cook pancakes for about 2 minutes on each side.
Serve immediately with extra chocolate chips, strawberries, or powdered sugar to top.
