Pumpkin Black Bean Soup

Ingredients

  • 1 Yellow onion diced
  • 1 cup Vegetable broth divided
  • 1 tsp Curry powder
  • 1 tsp Cumin
  • 2 tsp Sea salt
  • 1/4 tsp Cayenne
  • 10 turns Black pepper
  • 2 cans Farmer's Market Organic Pumpkin Puree
  • 1 can Black beans
  • 1 can Coconut Milk
  • 1 can Fire-roasted diced tomatoes
  • Pepitas and chives for topping optional

Instructions

  1. Sauté onions with ½ a cup of vegetable broth until tender on medium heat, stirring often - about 10 minutes. Add more broth as necessary to prevent the pan from burning.

  2. Add spices and stir to coat the onions.

  3. Add in pumpkin puree, black beans, coconut milk, and diced tomatoes. Stir to incorporate.

  4. Add second 1/2 cup of vegetable broth. Add to reach your desired consistency.

  5. Store together and gently heat until boiling. Turn off heat.

  6. Top with pepitas, chopped chives, and enjoy.
