Sweet Potato Pancakes

Ingredients

  • 1 can Farmer's Market Foods Organic Sweet Potato
  • 1 1/2 cup all-purpose flour sifted
  • 3 1/2 tbsp baking powder
  • 1 tsp salt
  • 1/2 tsp ground nutmeg
  • 2 eggs beaten
  • 1 1/2 cup milk
  • 1/4 cup butter melted

Instructions

  1. Sift dry ingredients into a mixing bowl. 

  2. Combine remaining ingredients; add flour to mixture, stirring until just dry ingredients are moistened. Drop tablespoons of mixture onto hot greased griddle and fry, turning once, until browned on both sides.
