Pumpkin Squares

Course Breakfast, Dessert, Side Dish

Ingredients

  • 1 can Farmer's Market Foods Organic Pumpkin
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 4 egg whites
  • 1 egg
  • 1 1/2 cup sugar
  • 2/3 cup unsweetened applesauce
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350 F. 

  2. In a large bowl, sift together flour, salt, baking powder, baking soda, cinnamon, and nutmeg. 

  3. In another large bowl, beat together eggs, pumpkin, sugar, applesauce, oil, and vanilla. Gradually add the flour mixture to the pumpkin mixture; beat well. 

  4. Pour batter into a baking dish that has been coated with nonstick vegetable spray. Bake for 30 minutes, or until a toothpick inserted in the center comes out clean. 

  5. Cool completely, and serve.
