Pumpkin Cookies


Ingredients

COOKIES 
  • 2 1/2 c all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnimon
  • 1 tsp nutmeg
  • 1/2 c butter softened
  • 1 c sugar
  • 1/2 c brown sugar
  • 1 cup Farmer's Market Organic Pumpkin
  • 1 egg
  • 1 tsp vanilla

  • ICING
  • 2 c powdered sugar
  • 3 tbsp milk
  • 2 tbsp melted butter
  • 1 tsp vanilla ext.


  • Directions

    COOKIES
    Mix all cookie ingredients together with electric mixer until smooth and fluffy. You can separate dry and wet ingedients if you have the time (optional). Drop heaping rounded tablespoons onto greased cookie sheet. I use pam. Bake in pre-heated oven 350 degrees for approx. 17 min., until lightly browned. Let cool completely.
    ICING
    In small bowl, combine icing ingredients and blend until smooth. Heat until very liquidy (40 seconds) and drizzle over cookies. Works best on cooled cookies.
